Watermelon Salsa

Watermelon Salsa Recipe

Ingredients:

  • 3 cups watermelon, diced
  • 1 cup cucumber, diced
  • 1/2 cup red bell pepper, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 1-2 jalapeño peppers, seeded and finely chopped (optional, for a spicy kick)
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions:

  1. Prepare the Ingredients: Dice the watermelon, cucumber, red bell pepper, and red onion. Finely chop the fresh cilantro and jalapeño peppers.
  2. Combine in a Bowl: In a large mixing bowl, combine the watermelon, cucumber, red bell pepper, red onion, cilantro, and jalapeños.
  3. Add Lime Juice: Squeeze the juice of two limes over the mixture.
  4. Season: Add salt and pepper to taste.
  5. Mix Gently: Gently toss all ingredients until well combined.
  6. Chill and Serve: Refrigerate the salsa for at least 30 minutes to let the flavors meld. Serve chilled with whole-grain tortilla chips or as a topping for grilled fish or chicken.
