Breakfast Today: Cantaloupe Ginger Smoothie

This fast and easy-to-make cantaloupe ginger smoothie is a perfect summer refresher. It's good for breakfast, but also makes a wonderful snack. Cantaloupe is about 90% water, so it is a great hydrating treat for hot days – and it definitely has been hot. Cantaloupes get their color from carotenoids that convert in the body to vitamin A. Melons in general are also good sources of fiber, vitamins B and C, folate and potassium.

Ginger gives this drink a spicy zing. Ginger is also has anti-inflammatory properties! So the next time you need something refreshing, try this healthy and thirst-quenching drink.

Cantaloupe Ginger Smoothie

• 1 cantaloupe, peeled, seeded, and cut into chunks
• 1/2 cup fresh orange juice
• 1/4 cup fresh lime juice
• 1 1/2 tsp finely grated ginger • 2 cups ice cubes
• 1/4 cup packed mint leaves, plus extra sprigs for garnish
• Lime slices, optional

In a blender, place cantaloupe chunks, orange juice, lime juice, ginger and ice. Add mint and blend briefly to chop leaves. Blend until smooth. Divide among serving glasses and garnish with lime wheels and mint sprigs.
